These delightful mini beef and cheese pies combine a savory beef mince filling with a crispy puff pastry crust and melted cheese, creating the perfect treat for gatherings, picnics, or easy weeknight dinners.
Preheat the oven to 370°F/220°C. Lightly grease a 12-cup muffin tin.

Heat the olive oil in a large frying pan and add the beef mince, onion, and dried mixed herbs. Sauté until the beef is browned.

Stir in the all-purpose flour and cook for 1 minute.

Add the tomato sauce and beef stock. Bring the mixture to a boil, then reduce the heat to a simmer, stirring occasionally, until the mixture thickens, about 5-6 minutes.

Season the beef mixture with salt and pepper to taste.

Spoon the beef mixture into the prepared muffin tin cups, filling each about halfway. Sprinkle each cup with grated cheese.

Roll the puff pastry sheets a little thinner and cut 12 circles, each with a diameter 1 cm larger than the muffin tin cups.

Place the pastry rounds over the top of each filled muffin tin cup, pressing around the edges to seal.

Make several slits in the pastry to allow steam to escape during baking.

Place the muffin tin in the oven and bake for 20 to 25 minutes, or until the pastry is golden brown.
