When does ground sausage expire?
If you've just bought fresh ground sausage from the grocery store, it's good in the refrigerator for 1-2 days past the 'sell by' date printed on the package. Once you've cooked your sausage, it can be kept in the refrigerator for about 3-4 days. If you've frozen your raw ground sausage, it can last up to 2 months. After this, it may start losing its flavor, but it won't be harmful to eat.
How do you tell if ground sausage is bad?
Bad ground sausage has a distinct sour or 'off' smell. A key sign is if the meat turns grey in color. If you see spots of green, grey or mold, do not eat it. Also check the fat on your sausage; it should be white or pale yellow, not darkened or green. If any of these signs are present, toss it out to be on the safe side.
Tips for storing ground sausage to extend shelf life
• Always wrap your fresh sausage tightly in cling film or a plastic bag before storing in the refrigerator.
• For optimal flavor, use frozen ground sausage within the first month.
• To freeze ground sausage, wrap it tightly in aluminium foil or plastic freezer wrap, or place it in heavy-duty freezer bags.
• To thaw ground sausage, the best method is to defrost it in the refrigerator overnight. If you're in a hurry, you can thaw it in the microwave using the defrost setting, but be careful not to start cooking it.
