Here are a few clues for you: first, an unusual coloration - it should typically be a consistent, off-white or pale beige color, any dark or diverse spots can be a sign of mold or spoilage. You'll also want to give it a sniff - any sour or off-putting smell is a signal to toss it. Finally, if it's drier or harder than it should be, or has a noticeably different taste, it's likely not good anymore.
Tips for storing almond paste to extend shelf life
• Always keep your almond paste tightly sealed when not in use, ideally in an airtight container.
• Store it in a cool, dry, and dark place if unopened. Once opened, keep it in the refrigerator to help maintain its freshness.
