When does cacao powder expire?
Though the expiration date can sometimes be a little confusing to understand, cacao powder tends to generally last a long time thanks to its dry nature. Unopened, a packaged of cacao powder can last up to 2-3 years past its printed expiration date if stored properly. Once opened, it's best to use it up within six months to a year for optimal flavor, however, it should remain safe to consume for up to two years if kept in a cool, dark place.

It can be a little tricky to tell if cacao powder has gone bad as it doesn't spoil in the usual ways. However, there are a few signs to be aware of. Firstly, if you notice an off smell or any change in color, that's a red flag. Cacao powder should smell like chocolate and be a deep, rich brown. If it has developed an unpleasant odor or changed to a lighter color, it may be stale or spoiled. Similarly, if you see any signs of mold or bugs in the container, these are definite indications that it has gone bad and should be thrown out.
Tips for storing cacao powder to extend shelf life
• Keep your cacao powder in an airtight container away from heat, light and moisture.
• Storing it in a cool, dark pantry can help extend its shelf life. Avoid the refrigerator as it can introduce moisture, which will cause the powder to spoil.
• Always use a dry spoon to remove the powder from its container to avoid introducing any moisture.
• If you have a large amount of cacao powder you won't use up quickly, consider freezing some of it. Put the cacao powder in an airtight container or a zip-top freezer bag and freeze it. Be sure to let it reach room temperature before opening the container when you plan to use it, to prevent condensation from forming.
