Super mild-tasting, spaghetti squash is sometimes used as a substitute for pasta noodles. To prepare, slice it in half lengthwise and scoop out the center pocket of seeds. Brush the inside with oil and season with salt and pepper. After roasting the squash cut side down in the oven, the interior easily separates into spaghetti-like strands using a fork. Give it a try and serve with a tomato or cream-based sauce.
