Heat the olive oil in a skillet over medium heat, then add the sliced onion and salt. Cook, stirring occasionally, for about 10-15 minutes until the onions have caramelized. Set onions aside.

Preheat another skillet or griddle over medium low heat and add a thin layer of vegan butter to the pan.

Spread vegan butter on one side of each slice of sourdough bread.

Place two slices of bread in the pan, buttered-side down.
