Frozen vegan cheese can maintain best quality for about 2 to 3 months, but will remain safe beyond that time if continually kept at 0°F.

Additionally, if the cheese has become extremely hard or dry, or if it appears discolored, these are all signs that it has gone bad. • Once opened, rewrap the cheese tightly in plastic wrap, aluminum foil, or wax paper to prevent it from drying out.
• Store homemade vegan cheese in an airtight container or simply zip it in a bag, after removing as much air as possible, before refrigerating or freezing.
• If you choose to freeze the cheese, grate or slice it first and then store in airtight containers or freezer bags. Thaw it in the fridge overnight before using.
