In a large skillet over medium heat, cook the diced bacon until crisp
2
Remove the crisped bacon with a slotted spoon. Set aside on a paper towel lined plate. Discard all but 1 tbsp of bacon grease from the skillet.
3
Add the cubed ham to the warm skillet. Cook until the ham is browned, stirring frequently.
4
Pour in the tomato sauce, chicken broth, onion powder, chopped fresh basil leaves, salt and ground black pepper. Stir well to combine.
5
Add the penne pasta to the skillet. Stir until pasta is incorporated into the sauce. Bring the mixture to a boil. Cover and let it cook until the pasta is tender, stirring once or twice, for about 15 minutes.
6
Once pasta is cooked, stir in the drained pineapple tidbits and the reserved bacon. Remove skillet from heat.
7
Sprinkle the pasta mixture with shredded mozzarella cheese. Cover the skillet and let it sit until the cheese has melted.
8
Before serving, sprinkle the dish with chopped fresh cilantro. Serve hot.
