Swiss Cheese, Mushroom, and Caramelized Onion Stuffed Chicken Breasts
Tender chicken breasts get an upgrade with a savory filling of melted Swiss cheese, earthy mushrooms, and sweet caramelized onions. The entire dish comes together in one pan for an easy-to-prepare, impressive dinner.
In a medium oven-safe skillet over medium-high heat, melt 1 tablespoon of the butter. Add the thinly sliced onion and sliced fresh mushrooms, and cook until they are caramelized and golden brown, about 10-15 minutes.

Add the minced garlic, 1/2 teaspoon of the salt, and 1/4 teaspoon of the black pepper to the skillet, stir well, and cook for another 2 minutes.

While the onions and mushrooms are cooking, cut a deep pocket into the side of each of the boneless, skinless chicken breasts, being careful not to cut all the way through.

In a small bowl, combine the paprika, Italian seasoning, remaining salt, and remaining black pepper, then rub this spice mixture all over the chicken breasts, inside and out.

Stuff each chicken breast with the caramelized onion and mushroom mixture, then top with a slice of Swiss cheese.

Using the same skillet, heat the remaining butter and the olive oil over medium-high heat.

Add the stuffed chicken breasts to the skillet and sear for 2-3 minutes on each side, until the chicken is golden brown.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the chicken has reached an internal temperature of 165 degrees Fahrenheit.

Serve the chicken breasts hot, making sure to remove any visible cheese that may have melted over the sides of the chicken.
