1
Remove the giblets from the inside of the turkey. Take the turkey out of the fridge and let it come to room temperature for about one hour before you begin cooking. Preheat oven to 375 degrees Fahrenheit.
2
Finely chop half of the rosemary, sage, and thyme leaves. Mix the softened butter with the chopped herbs, 1 tbsp of sea salt, and 1 tsp of black pepper. This will create an aromatic, flavoured butter.
3
Smear the herbed butter all over the turkey, making sure to gently lift the skin and rub some under the skin as well.
4
Stuff the cavities of the turkey with the apple, orange, onion, and the remaining whole herbs.
5
Place the turkey, breast-side up, on a roasting rack in a roasting pan.
6
Insert a meat thermometer into the thickest part of the thigh, but not touching the bone. Set the desired temperature to 165 degrees Fahrenheit.
7
Pour the chicken broth into the pan and cook the turkey in the center of the oven until the internal temperature reaches 165 degrees Fahrenheit, which should take approximately 2-3 hours.
8
While the turkey is roasting, use the giblets to prepare a simple gravy. Over medium heat in a small saucepan, simmer the giblets with a cup of water for about an hour.
9
Strain the giblets out and whisk in 2 tablespoons of all-purpose flour until the gravy thickens. Season with remaining black pepper.
10
Once the turkey is done, carefully remove from the oven, tent with tin foil, and let rest for 20 minutes before carving.
11
Serve the turkey with the giblet gravy on the side.
