In a medium saucepan, melt butter over low heat, add finely chopped onion and cook for a few minutes until softened.

Add milk, cloves, nutmeg, white pepper, bay leaf, thyme and salt to the saucepan, and bring to a simmer.

Once milk is simmering, remove the herbs and cloves. Add the flour, whisking continuously to avoid lumps, until the sauce thickens and coats the back of a spoon.
ASSEMBLING THE SANDWICHES

Place 12 slices of French bread on a sheet pan or roasting pan.

Spread a thin layer of béchamel sauce onto each slice using a spatula.

Layer ham and Gruyère cheese on top of the sauce. Spread a bit more béchamel on top of the cheese.

Place the remaining slices of French bread on top of the cheese and béchamel.
