Soak the paneer cubes in hot water with a pinch of salt for 10 minutes.
SPINACH PUREE

In a large pot, boil water and add the roughly chopped spinach leaves and baking soda. Cook for 5 minutes.

Drain the spinach and transfer it to a blender. Blend until smooth.
COOKING

In a heavy-bottomed pan or wok, heat the ghee, then add cumin seeds, bay leaf, fennel seeds, and the minced ginger, garlic, and chili paste. Sizzle for about 1 minute.

Add the chopped onion, season with salt, and cook for 2 minutes.

Stir in cumin powder, coriander powder, and chili powder. Cook for 5 minutes.
