Melt unsalted butter in the microwave in a microwave-safe bowl, and set aside to cool slightly.

In another medium-sized microwave-safe bowl, whisk together granulated sugar, large eggs, and large egg yolk until well combined.

Add fresh lemon juice, finely grated lemon zest, and salt to the sugar and egg mixture, and whisk until smooth.
