Enjoy the burst of lemon flavor and the wholesome goodness of chicken in this easy one-pot pasta dish. The vibrant green asparagus adds a fun crunch and freshness to the meal, making it perfect for a quick weeknight dinner or a relaxed weekend gathering.
In a deep skillet or sauté pan, heat the olive oil over medium-high heat.
2
Add the chicken, season with half the salt and pepper and brown until fully cooked, about 8 minutes. Transfer cooked chicken to a plate and set aside.
3
In the same skillet, add the minced garlic and sauté for 20 seconds until fragrant.
4
Pour in the chicken broth and bring to a boil. Stir in the penne pasta and remaining salt. Lower the heat, cover the pan and let it simmer until the pasta is half-cooked, about 6 to 7 minutes.
5
Spread asparagus on top of the simmering pasta (do not stir), sprinkle the remaining pepper, cover and let it cook for 4 - 5 minutes until asparagus is tender.
6
Add cream cheese, parmesan cheese, lemon zest and lemon juice to the pan. Stir until the cheeses have melted and formed a creamy sauce.
7
Return the cooked chicken to the pan, mix well with the pasta and sauce.
8
Remove from heat, let the pasta sit for a few minutes to thicken the sauce. Sprinkle with chopped parsley before serving.
