Begin by cooking the potatoes. Place them, unpeeled, in a large pot of boiling water and cook until they are fork-tender. Once done, drain the water off.

Allow the boiled potatoes to cool. Once they are cool enough to handle, peel them.

Mash the peeled potatoes thoroughly with a potato masher until smooth and without lumps.

To the mashed potatoes, add the potato starch, dried thyme, garlic powder, grated nutmeg and salt. Mix well.

Knead the mixture with clean hands until it forms a smooth dough.

While prepping the dough, start heating a large pot of water with sufficient salt. Bring it to a light simmer.

Dampen your hands with water and then shape the dough into 7 equal-sized balls.

Gently lower the dumplings into the simmering water. The water should not be boiling; an ideal temperature would be around 80-85 degrees Celsius.

Cook the dumplings in the hot water for about 15 minutes. The dumplings will float to the surface when they are ready.

Use a slotted spoon to carefully remove the dumplings from the water. Serve immediately and savor these savory delights!
