Season the chicken thighs with garlic salt, pepper, paprika, and Greek seasoning.

On the sauté mode of your Instant Pot, add the olive oil and heat. Cook chicken thighs skin side down for about 5-7 minutes until golden. Flip and cook for another 2-3 minutes. Remove and set aside.

In the same pot, add the sliced onions, sliced red bell pepper, and minced garlic. Sauté for about 3 minutes until onion is soft.

Add the water to the Instant Pot and stir vigorously to loosen any stuck bits from the bottom.

Layer the seared chicken thighs on top of the potatoes.
