These delicious Rustic Herb Chicken & Potato Pouches are a delightful summer dinner cooked in foil packs for an easy cleanup. Enjoy perfectly seasoned chicken, potatoes, and mushrooms all grilled to perfection.
In a small bowl, mix together garlic powder, onion powder, dried oregano, dried basil, dried dill, salt, and black pepper. Set aside.

In a large bowl, combine the boneless skinless chicken thighs, thinly sliced red potatoes, and sliced mushrooms. Add the 3 tablespoons of oil and toss until everything is well-coated.

Lay out 4 12x12-inch sheets of nonstick foil on a flat surface. Divide the chicken, potatoes, and mushroom mixture evenly among the foil sheets.

Sprinkle the prepared seasoning mixture over the chicken, potatoes, and mushrooms in each foil pack.

Fold the foil over the ingredients, scrunch the ends together to seal the foil packs tightly.

Preheat the grill to medium-high heat. Place the foil packs on the grill and cook for 10-15 minutes, then flip and cook for another 5-7 minutes or until the chicken is cooked through.
