Preheat oven to 375°F (190°C) and place a rack in the middle.

Trim any excess fat from the edges of the 4 chicken breasts.

One at a time, place chicken breasts between sheets of parchment paper and use a mallet or rolling pin to pound each breast until about 1/4 inch thick. Season with 1 tsp kosher salt and 1/2 tsp freshly ground pepper on both sides.

Place chicken smooth side down on a work surface. Top one half of each breast with a slice of ham and a slice of Gruyère cheese, leaving some space around the edges. Fold chicken breast in half over the ham and cheese, pressing the edges together to seal tightly.

Whisk the large egg in a shallow bowl. In another shallow bowl, mix 3/4 cup dry breadcrumbs and 1/4 cup finely chopped parsley. Place 1/2 cup all-purpose flour on a plate.

Dredge each stuffed chicken breast in flour, shaking off the excess, then dip into the egg mixture, and finally coat with the breadcrumb-parsley mix, ensuring even coverage. Place the coated chicken breasts on a plate.

Heat 3 Tbsp of neutral oil in a large heavy skillet over medium-high heat until shimmering. Cook the chicken breasts until browned on all sides, about 2-3 minutes per side. Transfer to a wire rack set on a rimmed baking sheet and season with salt, if desired.

Bake the chicken breasts in the preheated oven until fully cooked and an instant-read thermometer inserted into the thickest part registers 165°F (74°C), about 20-25 minutes. Let them rest for a few minutes before serving.
