Preheat your oven to 400 degrees Fahrenheit.

Grease a large baking dish with 1 tablespoon of butter and set it aside.

In a large pot of salted boiling water, cook elbow macaroni until it's al dente, according to package instructions. Drain well.

While the pasta is cooking, melt the remaining butter in a separate large pot over medium heat. Stir in the flour and cook for about 2 minutes.

Slowly add the milk, whisking continuously to prevent lumps from forming. Bring the mixture to a simmer, keep stirring until it thickens.

Remove the pot from heat and stir in the gruyère and cheddar cheeses, cayenne pepper, and kosher salt. Continue to stir until the cheese is completely melted.

Add the drained macaroni to the cheese sauce, stir well until it's evenly coated.

Transfer the macaroni and cheese to the prepared baking dish, sprinkle the grated Parmesan cheese on top.
