In a large skillet or dutch oven, heat 2 tbsp olive oil over medium heat. Once heated, add cubed chicken.
2
Add Italian dressing, Italian seasoning, garlic salt, and ground black pepper to the chicken. Cook for 5-7 minutes, stirring occasionally, until chicken is fully cooked. Remove chicken from the pan and set aside.
3
In the same pan, heat 1 tbsp olive oil and sauté diced onion and minced garlic for 4-5 minutes, until softened.
4
Add uncooked pasta, marinara sauce, and chicken broth to the pan. Stir well, cover, and bring to a boil. Once boiling, reduce heat to medium and cook for 15-20 minutes, stirring occasionally, until pasta is cooked and all liquid is absorbed.
5
Turn off the heat, then stir in the cooked chicken, cottage cheese, and 1/2 cup shredded mozzarella cheese.
6
Top the dish evenly with grated Parmesan cheese and remaining shredded mozzarella cheese.
7
Place the skillet under the broiler in the oven for 3-5 minutes until the cheese is melted and bubbly.
8
Remove from oven, garnish with chopped fresh basil, and serve immediately.
