Rinse the sushi rice in a fine mesh strainer under cold water until the water runs clear, about 2 minutes. Tap the bottom of the strainer until the rice is well drained.

Transfer the rice to a medium saucepan with 2 1/4 cups water. Bring the mixture to a boil, reduce heat to low, cover, and simmer for 15 minutes.

Remove the saucepan from heat, keep it covered, and let the rice rest for 10 minutes.

In a small saucepan, combine 4 Tbsp of rice vinegar with sugar and salt. Heat over medium heat, whisking until the sugar has dissolved. Remove from heat and let it cool.
