These Crispy Tuna Potato Patties are scrumptious and ready in just 45 minutes. Using canned tuna, potatoes, and a crispy panko breadcrumb coating, enjoy a delightful appetizer or light snack cooked to perfection in your air fryer.
Place the diced potatoes in a small saucepan and cover with water. Cook over medium-high heat until potatoes are fork-tender, about 15 minutes. Drain and transfer the cooked potatoes to a medium bowl.
2
In the bowl with the cooked potatoes, add the drained tuna, 1/2 tsp of kosher salt, and 1/4 tsp of black pepper. Mix well and mash the tuna and potatoes with a fork or potato masher.
3
Whisk the egg in a shallow bowl. In a separate shallow bowl, combine the panko bread crumbs with the remaining 1/4 tsp kosher salt and 1/4 tsp black pepper.
4
Using your hands, form the tuna and potato mixture into ten equal patties.
5
Dip each patty into the beaten egg, then coat with the seasoned panko breadcrumbs.
6
Preheat your air fryer to 400°F (200°C).
7
Place the coated tuna patties into the air fryer basket, leaving some space between each. Spray the tops of the patties with olive oil spray.
8
Air fry for 10 minutes, flipping the patties halfway through and spraying the other side with olive oil spray, until they are golden brown and crispy.
OPTIONAL DIPPING SAUCE
9
In a small bowl, combine mayonnaise and lemon juice. Stir well.
10
Serve the crispy tuna potato patties with the lemon mayo dipping sauce or your favorite dipping sauce on the side.
