These Crispy Tuna Potato Patties are scrumptious and ready in just 45 minutes. Using canned tuna, potatoes, and a crispy panko breadcrumb coating, enjoy a delightful appetizer or light snack cooked to perfection in your air fryer.
Place the diced potatoes in a small saucepan and cover with water. Cook over medium-high heat until potatoes are fork-tender, about 15 minutes. Drain and transfer the cooked potatoes to a medium bowl.

In the bowl with the cooked potatoes, add the drained tuna, 1/2 tsp of kosher salt, and 1/4 tsp of black pepper. Mix well and mash the tuna and potatoes with a fork or potato masher.

Whisk the egg in a shallow bowl. In a separate shallow bowl, combine the panko bread crumbs with the remaining 1/4 tsp kosher salt and 1/4 tsp black pepper.

Using your hands, form the tuna and potato mixture into ten equal patties.

Dip each patty into the beaten egg, then coat with the seasoned panko breadcrumbs.

Preheat your air fryer to 400°F (200°C).

Place the coated tuna patties into the air fryer basket, leaving some space between each. Spray the tops of the patties with olive oil spray.
