Press the tofu by wrapping it in towels and placing a plate on top of it until excess liquid is absorbed by the towels.

Slice the pressed tofu into 1-inch cubes.

Sprinkle the salt on the tofu cubes, add the cornstarch, and coat the tofu well in the cornstarch.
SAUCE

In a bowl, mix together water, coconut sugar, maple syrup, chili sauce, soy sauce, sesame oil, and cornstarch for the sauce. Set aside.

In a pan, heat 1 tablespoon of sesame oil over medium-high heat and fry the tofu cubes until crisp and golden, turning them occasionally to crisp all sides.

Remove the tofu from the pan and set aside.

In the same pan, heat the remaining 1 tablespoon of sesame oil and sauté the scallions, bell peppers, and minced garlic.

Give the sauce a good mix, then pour it into the pan and bring to a boil over medium heat.

Add the crispy tofu to the pan and cook for a few more minutes until the sauce thickens and the tofu has absorbed some of the sauce.
