Crispy Chicken, Apple, Sweet Potato, and Brussels Sprouts Medley

Heat the olive oil in a large, nonstick or cast iron skillet over medium-high until hot and shimmering.

Add the chicken, 1/2 teaspoon kosher salt, black pepper, and chopped bacon to the skillet. Cook until the chicken is lightly browned and cooked through, and the bacon is crisp, about 8 minutes. Transfer the mixture to a plate lined with paper towels to drain.

Discard all but 1 1/2 tablespoons of bacon drippings from the pan and return the skillet to medium-high heat.

Add Brussels sprouts, sweet potato, onion, and remaining 1/2 teaspoon salt to the skillet. Cook, stirring occasionally, until crisp-tender and the onions are beginning to look translucent, about 10 minutes.

Stir in the apples, garlic, thyme, and cinnamon. Cook for 3 minutes, allowing the apples to soften slightly.

Pour in 1/2 cup of the chicken stock and bring to a boil. Allow the liquid to evaporate, about 2 minutes.

Return the reserved chicken and bacon to the skillet, and add the remaining 1/2 cup of chicken stock. Cook until heated through, about 2 minutes.
