Line two 18 x 13-inch baking sheets with silicone baking mats or parchment paper.

In a medium mixing bowl, whisk together all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, ground ginger, and ground cloves for 20 seconds.

In the bowl of an electric stand mixer fitted with the paddle attachment, cream together unsalted butter, granulated sugar, and light brown sugar until well combined.

Mix in the large egg, then blend in canned pumpkin and vanilla extract. Add in the flour mixture and mix just until combined.

Using a 1 1/2 Tbsp cookie scoop (filled just slightly heaping), drop the dough onto the prepared baking sheet, spacing cookies 2 inches apart.

Bake one sheet at a time until cookies are set, about 13 - 15 minutes.

Cool on the baking sheet for several minutes, then transfer to a wire rack to cool completely.

Once cookies are completely cooled, frost them with store-bought cream cheese frosting.
