Achiote, also known as annatto, is a reddish-orange seasoning derived from the seeds of the Bixa orellana tree. Achiote is used for both its warm, slightly sweet, and nutty flavor, as well as its vibrant color, lending a beautiful hue to the dishes it is used in.
