Eggplant, also known as Aubergine, can be enjoyed in a bevy of recipes and is often used as a substitute for meat. Look for eggplant that has smooth, shiny skin and a green calyx (stem). Eggplant is a low-calorie food that is fat free, cholesterol free, sodium free and a good source of dietary fiber. Try it as a pizza topping, in lasagna, or grilled with portabella mushrooms in a hot sandwich.
