Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.

Start by soaking the dates in hot water for 5 minutes. Drain and set aside.

In the meantime, toss the sweet potatoes in olive oil, sea salt, pepper, onion powder and smoked paprika. Spread out in a single layer on the lined baking sheet.

Roast the sweet potatoes in the oven for 30 minutes until lightly browned, turning halfway through.

In a pan, cook the bacon pieces until crispy. Transfer to a paper towel to drain.

With 10 minutes left on the sweet potatoes, sprinkle the walnuts over the potatoes and return to the oven.
