Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.

Start by soaking the dates in hot water for 5 minutes. Drain and set aside.

In the meantime, toss the sweet potatoes in olive oil, sea salt, pepper, onion powder and smoked paprika. Spread out in a single layer on the lined baking sheet.

Roast the sweet potatoes in the oven for 30 minutes until lightly browned, turning halfway through.

In a pan, cook the bacon pieces until crispy. Transfer to a paper towel to drain.

With 10 minutes left on the sweet potatoes, sprinkle the walnuts over the potatoes and return to the oven.

For the dressing, blend the soaked dates, lime juice, lime zest, balsamic vinegar, minced garlic, salt, red pepper flakes (optional) and olive oil until smooth.

Once sweet potatoes and walnuts are done, let them cool for a few minutes.

Combine sweet potatoes, walnuts, bacon pieces in a large bowl.

Pour over a desired amount of dressing and toss gently until well combined.
