Grease the Instant Pot lightly and pour the tomato salsa into it.

Lay the chicken breasts on top of the salsa and season with sea salt and taco seasoning.

Stir to ensure the chicken is evenly coated in the seasoning and salsa.

Place the lid on, turn the valve to sealing, and select Pressure Cook for 15 minutes.

Once the cooking time is up, turn off the Instant Pot and allow the pressure to release naturally for 10 minutes before opening the valve and removing the lid.

Shred the chicken and toss it in the juices remaining in the pot.

In a saucepan, bring the water to boil. Stir in the jasmine rice, reduce the heat to low, cover and simmer for 15 minutes until the rice is cooked and the water is absorbed.

Once the rice is done, fluff it with a fork. Mix in the lime juice and fresh cilantro.

Serve the spicy salsa chicken over a fluffy bed of cilantro-lime rice.
