This savory oyster ground beef rice bowl is an easy and delicious dish combining minced beef, oyster sauce, onions, green peas, and eggs over a bed of steamed rice. Make it gluten-free by using gluten-free oyster sauce, dry sherry, and tamari.
In a small bowl, mix together chicken stock, oyster sauce, Shaoxing wine, light soy sauce, dark soy sauce, and white pepper powder.

2
Heat peanut oil in a large nonstick pan over medium heat.
3
Add the ground beef and spread it with a spatula. Cook without touching until the bottom is browned, then break up the beef into smaller bits.
4
Add the chopped onions and minced ginger to the pan. Cook and stir occasionally until onions turn tender and the edges are lightly browned, about 5 minutes.
5
Pour the prepared sauce into the pan and mix well.
6
Cover and simmer for 10 minutes.
7
Whisk cornstarch with 1/4 cup of water in a small bowl.
8
Add frozen green peas to the beef.
9
Stir the cornstarch slurry again to dissolve completely, and pour half of the slurry into the pan. Mix well.
10
If needed, add more cornstarch slurry to the beef mixture and stir constantly until it thickens.
11
Crack 5 eggs onto the beef. Cover immediately and let it steam until the egg whites are cooked and the yolks are still runny, about 2 to 3 minutes. Adjust cooking time to your preferred doneness.
12
Turn off the heat and drizzle sesame oil over the beef.
13
Serve the beef, eggs, and sauce over steamed rice in bowls.
