Heat a large frying pan over medium heat while you divide the beef mixture into 8 even portions, shaping them into patties.

Cook the patties in the pan for 4 minutes on each side, working in batches if necessary. Lower the heat if needed to prevent burning.

Drain excess grease from the pan, retaining the fond (browned bits of food) on the bottom.

Pour the beef broth over the patties in the pan, scraping the bottom to deglaze it. Bring to a boil, then reduce to a simmer and cook for 20-25 minutes or until the liquid is reduced by half, flipping the patties every 10 minutes to prevent drying out.

Mix the cornstarch and water in a small bowl. Bring the sauce in the pan to a boil, then add the cornstarch mixture, stirring well. Reduce the heat to medium and cook for a few minutes until the sauce thickens.
