In a large bowl, whisk together 4 cups rice flour, 8 cups water, and 1 pinch salt until smooth.

Spread the vegetable oil lightly on a flat tray or plate in preparation for the steamed rice noodle sheets.
NOODLE MAKING

Fill a pot with 2 inches of water and bring it to a gentle boil. Set up a steamer with a taut, flat piece of unbleached cotton cloth, secured with string.

Pour two tablespoons of batter onto the cotton cloth, evenly spreading it to form a thin, circle-shaped layer that covers the cloth. Steam for 1 minute until the noodle sheet becomes firm.

Carefully use a bamboo stick or soft spatula to lift the rice batter from the cloth, placing it onto the oiled plate.

Repeat the process, stacking the noodle sheets on top of each other. If concerned about sticking, apply a thin layer of vegetable oil on each sheet.
