In a medium bowl, combine oat milk, juice and zest of a whole lemon, applesauce, olive oil, and granulated sugar. Whisk these ingredients until well incorporated.

In another large bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.

Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. It's okay if the batter is slightly lumpy.
