In a large bowl, mix the all-purpose flour, baking powder, sugar and salt.

Create a well in the central part of the dry mixture and add in the honey and whole milk.

Combine the ingredients using a spoon or clean hands, until the dough forms a sticky lump. Let it rest for 20 minutes, covered by a kitchen towel.
ROLLING AND CUTTING THE DOUGH

Lightly flour a kitchen surface and a rolling pin. Roll out the dough to a thinness of about 1/8-inch.

Cut out 4 x 3-inch rectangles from the dough. They don’t have to be perfect, a rough-rectangle shape will suffice.
FRYING THE SOPAPILLAS

Fill a medium-sized pot or cast iron skillet with canola oil up to a height of three inches.

Preheat the oil to 375 degrees F. Meanwhile, set up a plate lined with kitchen towel, and keep honey handy for serving.

Fry the sopapillas, only a few at a time, for about a minute, flipping halfway through, until they puff up and turn golden brown.

Transfer the freshly cooked sopapillas to the lined plate to drain the excess oil.
