Season both sides of chicken breasts with salt and pepper.

In a large soup pot, heat the olive oil over medium-high heat.

Add the seasoned chicken to the pot, cooking each side for 5 minutes until browned. Remove the chicken and set aside.

In the same pot, add the diced onion, chopped celery, and diced garlic, sauté until they start to soften.

Stir in the ground cumin, paprika, and dried oregano, sautéing for an additional 3 minutes.

Return the chicken to the pot along with chicken broth and diced tomatoes, stirring everything together.

Bring the mixture to a boil, then reduce to a simmer for 10 minutes.

Remove the chicken from the pot. Once cool, shred the chicken using two forks.

Add the shredded chicken back to the pot along with diced sweet potato and drained black beans, stirring everything together.

Bring the mixture back to a boil, then simmer for 10 minutes until the sweet potato is cooked through.

Stir in the finely chopped parsley, then season with additional salt and pepper if needed.

Remove the chili from heat and serve, perhaps with some crusty bread.
