Fresh Green Beans with Garlic and Caramelized Onions

Bring a large pot of water to a boil, and blanch the green beans for 3 minutes. Then, immediately transfer them to a bowl of ice water to stop the cooking process. Drain well.

In a large skillet, melt the butter over medium heat. Add the sliced onion, and cook, stirring occasionally, until the onions are golden brown and caramelized, about 10-12 minutes.

Add the minced garlic to the skillet, and cook for an additional 1 minute, or until fragrant.

Stir in the blanched green beans, salt, and black pepper, and cook for 2-3 minutes, or until the green beans are heated through and slightly tender.

Remove the skillet from heat, and stir in the apple cider vinegar, adjusting the seasoning if necessary.
