Five-Spice Slow Cooker Pork Roast with Sweet Potatoes

Place the cubed sweet potatoes in the bottom of a slow cooker.

Generously season the pork roast with Chinese Five Spice powder, kosher salt, and cracked black pepper on all sides, rubbing it well into the meat.

In a heavy-bottomed stainless steel or cast-iron skillet, heat the peanut oil over high heat.

Carefully place the seasoned pork roast in the hot skillet and sear each side until deep golden brown, about 3 minutes per side. Use tongs to rotate the roast.

Place the seared pork roast on top of the sweet potatoes in the slow cooker. Put the lid on and set the slow cooker to HIGH for 4-5 hours or LOW for 7-9 hours.

The pork roast is cooked when it reaches an internal temperature of 145°F when checked with an instant-read thermometer.

Remove the pork roast from the slow cooker and transfer it to a cutting board. Tent with foil and rest for 8 minutes before slicing.

Slice the rested pork roast into 1-inch thick chops.

To serve, place hot, cooked rice in each bowl, spoon some sweet potatoes and pan juices over the rice, and garnish with green onions and cilantro or parsley.
