Easy Cauliflower Delight Pizza

Preheat oven to 425°F.

Microwave the roughly chopped cauliflower in a microwave-safe bowl for 5-6 minutes, until softened.

Transfer the softened cauliflower to a food processor and pulse until it reaches a rice-like consistency.

Place the processed cauliflower in a clean kitchen towel, and press to remove any excess water.

In a large bowl, combine the cauliflower, egg, 1 cup of shredded mozzarella, 1/4 cup of grated Parmesan, and kosher salt to form dough.

Line a baking sheet with parchment paper and transfer the dough, pressing it into a thin, even crust.

Bake the crust for 20-25 minutes, or until golden and firm.

Remove the crust from the oven and spread the marinara sauce evenly over the surface.

Top with the remaining shredded mozzarella, remaining grated Parmesan, minced garlic, and halved cherry tomatoes.

Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and the crust is crisp.

Remove from the oven and garnish with torn fresh basil and a drizzle of balsamic glaze before serving.
