Heat the vegetable oil in a large pot or pan over medium heat.

Add the chopped onion, minced ginger, and minced garlic to the pan. Cook, stirring frequently until the onions become translucent and start turning golden brown.

Stir in the jalapeno peppers, salt, red chilli powder, turmeric, cumin seeds, and coriander powder. Continue to cook for 2-3 minutes, until fragrant.

Add the cubed potatoes and cauliflower florets to the pan, stirring to coat them in the spice mixture. Cook for 3-4 minutes.

Pour the crushed tomatoes into the pan, stirring the ingredients well. As the tomatoes release liquid, there is no need for extra water.

Reduce the heat to low, cover the pan with a lid, and let the aloo gobi cook for 20-25 minutes, until the cauliflower and potatoes are tender.
