In a mixing bowl, combine chicken cubes with cornstarch until evenly coated. Shake off excess cornstarch.

Heat coconut oil in a large skillet over medium heat. Add the coated chicken cubes and cook until lightly golden on all sides. Remove chicken from skillet and place on a paper towel.

In a mixing bowl, zest oranges, add orange juice (discarding seeds), minced garlic, grated ginger, low-sodium soy sauce, and low-sodium barbecue sauce. Whisk to combine.
