Preheat oven to 350 degrees.

Slice each chicken breast horizontally without cutting all the way through to create a pocket (butterflying). If needed, pound chicken breasts to create even thickness. Each breast (closed) should be no more than 1 inch in thickness.

In a cast iron skillet, cook bacon over medium heat until crispy. Remove bacon from the skillet and let it rest on paper towels to remove excess grease. Chop the bacon into small pieces when cool.
