Preheat the oven to 190C (375F) and line a baking tray with parchment paper.

Slice the ciabatta breads lengthwise and place them on a heated grill pan with the cut side down for 2 minutes to get lightly toasted.

Thinly slice the red onion into rings, pit and thinly slice the black olives and julienne the red bell pepper.

Brush the toasted side of each ciabatta half generously with tomato sauce. Sprinkle the dried Italian herbs. Spread minced garlic evenly over the tomato sauce.

Layer the sliced onion, olives, and julienned bell pepper over the tomato paste.

Place the loaded ciabatta halves onto the prepared baking tray and bake in the preheated oven for 10 minutes.

Remove the tray from the oven, and sprinkle a generous layer of shredded mozzarella cheese atop the veggies.

Put the tray back in the oven and bake for another 5-7 minutes, or until the cheese is bubbly, and golden brown in spots.

Take out of the oven and allow to cool for a couple of minutes, sprinkle the pizzas with the chopped fresh parsley and serve while still warm.
