Tender chicken breasts cooked in a skillet and smothered with barbecue sauce, melted cheddar jack cheese, crispy bacon, diced fresh tomatoes, and green onions, creating a delicious and satisfying dinner that the entire family will enjoy.
In a skillet, add bacon and cook over medium heat, turning occasionally until crispy. Transfer to a paper towel-lined plate to cool, then coarsely chop the bacon and set aside.
3
Drain off all but 2 teaspoons of the bacon fat from the skillet.
4
Season both sides of the chicken breasts with kosher salt and black pepper. Place the chicken in the skillet with hot bacon fat, and cook for 6-8 minutes on one side before turning and cooking for an additional 5-6 minutes or until fully cooked and no longer pink. Transfer the cooked chicken breasts to a clean platter.
5
Pour 1/4 cup of barbecue sauce into the skillet, scraping up any browned bits on the bottom. Return the chicken to the skillet and top each chicken breast with the remaining barbecue sauce.
6
Sprinkle 1/4 cup of cheddar jack cheese over each chicken breast, and bake in the preheated oven for 6-8 minutes, or until the cheese is melted and bubbly.
7
Before serving, top with chopped bacon, diced fresh tomatoes, and sliced green onions.
