Preheat your grill to medium-high (around 400 - 450 degrees Fahrenheit)
SPICE BLEND

In a small bowl, mix together the smoked paprika, ground pepper, onion powder, garlic powder, dried oregano, dried thyme, salt and cayenne pepper
FISH

Clean red snapper fillets and pat them dry. Brush each one with extra-virgin olive oil

Evenly distribute the spice blend over each side of the fillets, pressing gently to make sure it adheres
COOKING

Lightly oil the grill rack and place the fish onto it. Grill each side to get a nice char until the fish flakes easily when tested with a fork, this should take about 3 - 5 minutes per side
