When does fresh yeast expire?
Fresh yeast in a sealed and unopened package can last up to four months in your refrigerator, but it's far less durable once opened. If the package is opened, fresh yeast should be consumed within 1-2 weeks. Freezing isn't recommended because this can damage the yeast cells, impairing the yeast's ability to make your bread rise.
How do you tell if fresh yeast is bad?
To check if your fresh yeast has gone bad, simply dissolve a teaspoon of it in warm water (105-110°F). If it starts to froth and bubble within 10 minutes, your yeast is still good. If not, it’s likely dead and won’t work for your baking. Besides this, be on the lookout for mold, which would look like fuzzy spots of few different colors. A stale or off smell is also a giveaway.
Tips for storing fresh yeast to extend shelf life
• Keep the yeast refrigerated at all times, even if it's unopened. The cool temperatures slow down the activity of the yeast, prolonging its life.
• Once opened, make sure to reseal the container tightly to prevent moisture loss and keep the yeast fresh.
• You want to keep yeast away from high heat and sunlight, so don't store it in a sunny or hot part of your kitchen.
• Avoid getting any water or moisture into the yeast packaging. A little bit would result in making a small portion of the yeast dough-like and useless.
• If you won't use the yeast within two weeks of opening, consider buying smaller packages that you will consume quicker.
