Heat 2 tablespoons of oil in a large pan over medium heat.

Add potatoes and carrots to the pan, and saute for about 2 minutes. Next add bell pepper and saute for another minute.

Remove the vegetables from the pan and set them aside.

In the same pan, add an additional 2 tablespoons of oil and saute minced garlic and chopped onion until they are soft and fragrant.

Add chicken drumsticks to the pan, cooking until lightly browned.

Combine tomato puree, juice from canned pineapples, soy sauce, and bay leaves in the pan with the chicken and bring the mixture to a boil.

Reduce heat to low, cover the pan, and allow it to simmer for about 20 minutes or until the chicken is nearly done.

Add the sauteed vegetables, pineapple chunks, and green peas to the pan, stirring gently to combine.
