In a large Dutch oven, over medium heat, cook the sweet Italian sausage until browned. Remove from the oven and set aside.

In the same pot, add some clarified butter as needed. Once hot, sauté the diced yellow onion until translucent and softened.

Pour in the low-sodium chicken broth. To this, add the crushed red pepper flakes, kosher salt, and black pepper. Stir well.

Add in the diced Yukon gold potatoes. Increase the heat and bring the mixture to a boil before reducing heat to low. Let it simmer until the potatoes are cooked.

To the soup base, add the browned sweet Italian sausage, heavy cream, white wine, and the roughly chopped baby spinach. Mix well.
