Preheat your oven to 425 degrees F and position the rack to the middle.
CARROTS

Place the carrots on a large baking sheet. Drizzle with half the olive oil, and sprinkle with half of the salt, black pepper, garlic and thyme. Toss until evenly coated.
BEETS

On another baking sheet, repeat the previous step with the beets.

Place both baking sheets in the oven. Roast the carrots for about 20 minutes and the beets for 30-35 minutes, until both sets of vegetables are tender-crisp.
GLAZING

Remove the baking sheets from the oven and immediately add the butter and maple syrup evenly across both sets of vegetables. Let the butter melt, then toss the vegetables until coated.
FINISH WITH

Return the baking sheets to the oven for another 5 minutes.

Once roasted and glazed, combine the carrots and beets, and serve while warm.
