Boil water in a large pot. Once boiling, stir in the package of Barilla Red Lentil Rotini and cook according to package instructions.

Reserve one cup of pasta water, then drain the pasta.

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic and sauté until fragrant, around 1-2 minutes.

Add the diced Roma tomatoes to the skillet, season with salt and black pepper, and sauté until softened but firm, about 5 minutes.

Stir in the cooked pasta, reserved pasta water, chopped spinach, Kalamata olives, and half of the Parmesan cheese into the skillet.

Allow to heat for 2-3 minutes until the spinach has wilted. Adjust salt and freshly ground black pepper according to your preference.
