In a food processor, combine chopped yellow onion, red miso, white miso, sambal oelek, minced garlic, grated ginger, and mirin. Process until a smooth, thick paste forms. Reserve half of the miso paste for this recipe and store the remaining half in the refrigerator or freezer for later use.

Heat vegetable oil and toasted sesame oil in a large pot over medium-high heat. Add the pre-cut tofu cubes and fry until golden brown, about 5 minutes. Stir in 1/4 cup of the miso paste and cook for another 2-3 minutes. Remove tofu from the pot and set aside.
